Moving Toward a Healthier Diet
One really great thing about the warmer weather is the fact that locally fresh fruits and vegetables are only a farm stand away. Rhubarb is coming up in some places and those huge California strawberries, though not a local product, taste like heaven after a long, dark winter.
I am planning to dust off my cookbook for lowfat meals and see if I can come up with some filling dishes that focus more on vegetables than on meat. I know I eat more meat than I need to for nutritional purposes and want to get away from that as much as possible.
Interesting combinations of creative salads are another great option for sources of fresh foods. I have even had a few salads with flower petals in them, though to be honest, the flowers did not have a whole lot of taste. Give me a spinach, walnut and apple salad anyday, and I will be happy.
